As many of y’all know I am a pescetarian (I don’t eat meat, but I do eat fish and seafood (but on a limited basis). Recently I altered this diet slightly to #VB6, which is just, “vegan before 6.” Mark Bittman created this diet plan a few years ago as a way to eat more healthy (adding a ton of veggies and fruit in your diet) but with rules. Before 6pm you eat only vegan so no animal products, and try to keep out processed foods as much as possible. After 6pm the sky’s the limit (I’m still not eating meat … just a heads up). 

So, I’ve collected here some recipes I’ve tired so far on VB6 and others I can’t wait to make in da kitchen.

▴ 5 arugula salad (quinoa, cranberries, hazelnuts + lemon dressing)

▴ 6 soba noodles with chives and walnuts

▴ 7 homemade almond butter + apples

▴ 8 hummus + pita

▴ 9 Guacamole
